Really though, how is it that Daylight Savings never gets any easier? No matter how old we get, we still wake up groggy, disoriented, and utterly confounded that we have something new to readjust to and (in this case) a precious hour lost from our lives. We feel your pain, fellow DST-haters, and we’re here to help with breakfast spots that won’t weigh you down nearly as much as an altered clock does. You’ve gone through enough.

So when we needing to reset and/or check ourselves, we stop at ProsperOats. Here you can power up with a number of juice and bowl options to propel you through the day. For the bowls, just choose a base (yogurt, oatmeal, quinoa, etc.), sweetener, and toppings for the perfect build-your-own breakfast, or scan their list of tried and true favorites. We recommend the Oh Snap bowl with ginger snaps, banana, and dried dates.

2. Parsley {303 West 11th Avenue; 303.893.7914}: This neighborhood bistro touts some seriously delicious breakfast options. Check out the smoothies and juices if you’re looking for something light. And for a more substantial meal, the sandwiches are superb and are made with local, organic ingredients whenever possible. Try the Spicy Turkey or, for a great veggie option that’s loaded up with the good stuff, the Arcadian.

For breakfast, the Natural Refreshers and selection of Smoothies feature combinations of fruits and veggies that never would have even crossed our minds. That makes for an exciting and nourishing way to fill up and feel good. Or try the larger breakfast plates—the Market Scramble and Quinoa Johnny Cakes are sure to give you a guilt-free and energizing start to the day.

Onefold {1420 East 18th Avenue 303.954.0877}: Okay, this menu doesn’t totally qualify as “light” (duck fat is a big buzzword here), but sometimes you need more than a smoothie bowl and less than eggs Benedict. And on those days, this is the spot. The Breakfast Burrito (get it smothered with green chile!), Tacos, and Crepes are each enough to overshadow the dreariest of days. And Onefold prides itself on local, organic ingredients that are expertly assembled to serve up truly unforgettable eats. It’s a simple menu made with love, and we’ll always get out of bed for that.
