A Night At STK - Denver's newest and hippest steakhouse is more than just elevated eats—it's a place to party

Any longtime Denverite will confirm—our city, one of the original outposts of the wild west, doesn’t have a dearth of steakhouses. From old-school classics like Morton’s and Ruth’s Chris to newer takes like Guard & Grace, Elway’s, and Shanahan’s, Denver has the upscale meat and potatoes jam down pat. Now, these favorites can make way for the new sheriff in town. STK {1550 Market Street; 720.597.8010} brings the flavors everyone craves in steakhouse fare, only with a young, hip, vibe—to LoDo.

STK’s opening fête read like a who’s who of Denver A-listers, from Mayor Michael Hancock to stars of the Avalanche, Nuggets, and Broncos, along with a gaggle of beautiful people dressed to the nines. The concept aims to break away from the norm with a tagline ‘not your daddy’s steakhouse,’ and it does just that. The sleek  7,000-square-feet interior is filled with neon art that oozes sexy glam, boasts a DJ spinning a list of fun, danceable tunes, and servers exude an upbeat, casual-friendly attitude that breaks away from the stuffy steakhouses of yore. The party atmosphere is complete by diners hopping up on booths to dance to a personal theme song, and birthdays are celebrated by a line of servers with sparklers surrounding the table.

The drinks list offers a healthy selection of red and white wines, and of course, bubbles; and chic cocktails like the Cucumber Stiletto, a blend of Ketel One Citroen, St. Germain, muddled cucumber, and mint balanced with classic cocktails such as the STK Mule. The drinks menu is rounded out by a through bottled beer list focused on Colorado craft brews.

Executive Chef William Tuggle and his team built on STK classics to incorporate Colorado-sourced ingredients, featuring them on the menu with entrées like the Colorado Rack of Lamb, the Boulder Natural Chicken, served with rice and squash, and the Bison NY Strip Steak. STK classic dishes are also featured from the shareable pull apart bread, the Lil’ Brgs—STK’s riff on stacked sliders—and the Tuna Tartare served with taro chips. Naturally, the real draw for steak lovers will be just that, and at STK, it’s cooked to order. Choose a steak size (small, medium or large) and a cut (choose from filet medallion, skirt steak, loin strip, bone-in filet, porterhouse, or dry-aged Delmonico boneless ribeye) and have it cooked to your taste, topped with your choice of classic sauces, from béarnaise to chimichurri. You can also get your steak topped with foie gras or crab for a truly decadent meal. Enjoy your favorite steakhouse sides from broccolini to mac n’ cheese.

Dessert is also worth a mention, for as you enjoy an evening of seeing and being seen, rubbing elbows with Denver VIP,  you’ll want to finish your meal with a touch of something sweet, like their housemade donuts or butterscotch pudding. STK might not be the only steakhouse in Denver, but it’s certainly one of the most exciting new arrivals to LoDo in years. If you’re looking for a fun night out in a glitzy, trendy setting—from happy hour to a full steak dinner—STK will fit the bill.
