Sneak Preview: What Chefs Will Serve at Do at the Zoo - Great food for a great cause

If you love animals and have an elephant-sized appetite, there’s only one place to be on June 16: the Denver Zoo.

The annual Do at the Zoo allows you to drink cocktails and devour bites from some of Denver’s greatest chefs all while animal-watching and supporting the zoo’s operations, educational programs, and conservation efforts.

We asked Do at the Zoo’s VIP Caterer Secret Sauce F&B—the talented folks behind Ace, Steuben’s, and Vesta—what they’ll be cooking up for the event and now we can’t think about anything but their Bánh Mì Bites! Here’s the full lineup:

  • Bánh Mì Bites: Roasted pork belly, cilantro-jalapeño pesto, radish, pickled mustard seed, and crostini
  • Corn “Chowder” with crispy bacon, potato, and crab salad
  • Boudin Blanc with cherries, pickled ramps, and Dijonnaise
  • Barbecue Oysters
  • Meat and Cheese with housemade mustards, pickles, candied walnuts, and black pepper truffle honey

And here’s a preview of what some of the other participating restaurants will be serving up at the event:

Edible Beats (Linger, Root Down, Ophelia’s): Lamb Sliders and English Bergamot Shortbread Bites

La Sandia: Huarache and Sweet and Sour Guacamole

Zengo/La Biblioteca: Slow-Cooked Pork Ribs with roasted garlic, chipotle glaze, and Napa cabbage kimchee

Tamayo: Poblano Tamal

Jill’s Restaurant at the St. Julien Hotel & Spa: Smoked Pork Belly with runner beans, Toohey Family Farm greens, and Swedish mustard vinaigrette

range: Buffalo Barbacoa Tacos and Pimento  Cheese-Bacon Fritters with a green tomato-jalapeño jam

Baur’s: Lamb Merguez and Stuffed Monterey Bay Squid (crispy tentacles with piquillo purée, Manila clams, and micro-basil)

The Palm: Surf and Turf (lobster salad on endive and tenderloin crostini with creamy horseradish)

And that’s just the beginning! We also can’t wait to see what Adelita’s, Beatrice & Woodsley, Bubu, D Bar, FATE Brewing, Leña, Snooze, and all the other participants cook up.

Do at the Zoo takes place on June 16 at 7pm. Tickets are $150 until June 1, and $175 from June 2-16. You can purchase tickets at denverzoo.org/doatthezoo.
